How we reached this

Monounsaturated-dominant fat (~70% oleic acid). Heat-stable up to ~520°F smoke point. Cold-pressed retains polyphenols + vitamin E. Concern: ~70% of US avocado supply is Mexico (Michoacán) where cartel involvement in the supply chain has been documented; provenance angle for the next-level supply-chain feature.
