Cultured celery powder — naturally nitrate-rich celery cultured to generate nitrites. Used in 'uncured' meats as natural-source nitrite preservative. Functionally equivalent to synthetic sodium nitrite at the nitrosamine-formation risk level — WHO IARC Group 2A still applies regardless of natural-vs-synthetic source.
