How we reached this

Cocoa solids with part of the cocoa butter pressed out. Mechanical separation only; the flavanol-bearing solid is intact. Dutch-processed (alkalised) cocoa loses much of that flavanol content, but the name does not say which this is, so it is rated as plain reduced-fat cocoa.
