Sulfites (E220-228) — antimicrobial + browning preservatives in wine, dried fruit, processed foods. FDA GRAS but **allergen warning required at >10 ppm** (mandatory FALCPA labeling). 1-2% of population has sulfite sensitivity (severe asthma exacerbation risk).
